Saptami’s lunch and dinner platter consists of kingly fare consisting of the very known Mutton Biryani, Potato-Yogurt Salad, Tomato chutney, cottage cheese in spinach Sauce, Curried Lentil Balls and the authentic Prawn Malai curry and Sandesh. The recipes of authentic Prawn Malai curry and Sandesh are as follows:
1. Recipe of Prawn Malai Curry (Creamy Prawn Curry)
Ingredients
1 Kg Jumbo Prawns (shelled and de-veined) Tomatoes Chopped Onions Ginger Paste Garlic Paste Cumin Powder Coriander Powder Mustard seeds Turmeric Powder Red Chili Powder 2 Cups Coconut Milk Yogurt Salt Bay leaves 1 teaspoon sugar All spice Powder Salt
Method
1. Grind together mustard seeds, green chilies, turmeric powder.
2. Smear the prawns with the paste in step 1 and mustard oil. Let it marinate for an hour.
3. Now make a paste of onions, tomatoes and red chili powder.
4. In oil add the paste in step 3 along with ginger-garlic paste, cumin powder, coriander powder.
5. Fry the paste in step 4 for 20 minutes, stirring constantly and adding water to keep the spices from sticking at the bottom.
6. Add coconut milk and bring the gravy to a boil.
7. Add the marinated prawns and all spices powder. Simmer the gravy for 10 minutes and stir in yogurt.
8. Garnish it with coriander leaves.
2. Recipe for Sandesh
Ingredients
500gms of Cottage Cheese 375gms of Sugar Cardamom Powder Rose Water
Method
1. Knead cottage cheese into smooth paste.
2. In a non-stick wok fry cottage cheese and sugar over mild heat, stirring constantly until sugar melts and mixture leaves the pan.
3. When the mixture is done, remove it from the heat and let the mixture cool down.
4. Shape the mixture into balls, triangles or to the molds of your choice.
