Dussehra Feast: Breakfast Platter on Seventh Day (Saptami)

Dussehra feast intensifies on the Saptami or seventh day with peas-stuffed pooris, deep-fried banana cakes and lentil stew. The recipes are as follows:

1. Recipe for Karaishutir Kachuri (Green Peas Stuffed Luchis)

Ingredients

1 Cup regular flour 1/2 Cup wheat flour 2 tablespoons clarified butter Green Chilies Paste Ginger Paste Aniseeds Peas Salt Oil for frying

Method

1. In a wok, heat oil. Add aniseeds, green chilies paste and ginger paste. Cook for sometime and add peas and salt.

2. Once the peas become tender, cool it and grind it into paste.

3. Mix both the flours and add clarified butter and salt.

4. Knead this until you get a crumbly texture.

5. Add water and knead it to tight dough.

6. Make balls out of the dough.

7. Flatten the dough on your palms and fill the center with the pea’s mixture.

8. Close the dough to make a pouch.

9. Flatten the stuffed dough into small discs.

10. Heat enough oil for deep-frying.

11. Deep-fry these pea-stuffed discs until puffed-up or shallow-fry them like cutlets.

2. Recipe for Cholar Dal (Yellow-lentils)

Ingredients

Bengal Gram Powdered Cinnamon Whole Cardamom and cloves Roasted Cumin Powder Bay leaves Turmeric Powder Chili Powder Salt 1 teaspoon sugar Freshly Grated Coconut Coriander Leaves Slitted Green chilies

Method

1. Boil bengal gram with salt, sugar, turmeric powder and slitted green chilies.

2. In oil add whole cardamom, cloves, bay leaves, red chili powder, cinnamon powder and cumin powder. Fry these spices for sometime.

3. Pour these spices into the boiled bengal gram. Garnish it with freshly grated coconut and coriander leaves.

4. Simmer for sometime and serve hot with green peas luchi.

Note You can also serve Green Peas Luchi with Bengali Aloor Dum or Cholar Dal.
